Funfetti... oh yes! Probably my favorite variety of cake ever. I know I'm not alone b/c at work one day we looked up funfetti wedding cakes and yes, it's real. People have them all the time. So amazing. Anyhow, so somewhere I saw somebody talking about how you can omit the eggs/oil in your boxed cake mixes and add a can of soda instead. I have omitted the eggs/oil and used a can of pumpkin instead (YUM, espec. for spice or carrot cake mixes), but I did a little googling on the can of soda trick. Well as it turns out it is real!
INGREDIENTS
1 box funfetti cake mix
1 can Diet Fresca (or other diet drink.)
DIRECTIONS
Preheat oven to 350 degrees or to temperature recommend on box. Prepare the cake pan or cupcake molds you’d like to use.
Combine cake mix and fresca in medium bowl using a wooden spoon or rubber spatula until all dry mix is incorporated. Do NOT use an electric mixer or you will beat all of the carbonation out of the soda and it won’t turn out right.
Pour batter into cake pan and bake for time indicated on box or until a toothpick inserted in center comes out clean.
It really is that easy!
(only 2 ingredients…you can’t beat that!) but because you use a diet soda instead of eggs and oil is has less calories and much less fat.

I've done this using diet coke back in my weight watcher days; there are so many soda and cake mix combinations. A little hard to get out of the pan but tasted delish!
