So. Much. Kabocha Squash. TKD Recipe

There totally can be too much of a good thing, especially when its a food that is new to me and I dont know exactly what to do with it. So I have made kabocha squash everything... Here is my blog from when I first was excited about it a few days back. Now not so much. I had a salad for lunch yesterday where I tossed strips of the squash into a frying pan and then cooked it up with garlic, onion and spices and threw it over some raw spinach. Pretty decent. I turned it into kabocha soup thinking (hoping) it would be like butternut squash soup ( which is YUM) but this was not quite there. I followed the Kind Diet recipe for it and everything... it was just so bland. I ended up throwing a pile of spices in there to jazz it up. Everything from cinnamon to curry, chile powder to garlic. I ended up adding a ton of salt and then it was good. So heres my finished product. I had of course like 3 cups left over of the soup so I froze that. I STILL had over a half of the squash left, so I cut it up and froze it too. Hopefully it will keep. If not, at this point Im sick of it and dont care. Don't get me wrong... it was good the first 2-3 times I had it. But the kabocha squash would not go away. It was like no matter how much I cooked and ate it was still there. I cut the rest of it up, and cooked it in the microwave slightly, then put it in the freezer (along with my frozen soup). Maybe another day I'll need it. This week, I'm over it.

  1. Hey Leah! It's Katie from TKL. I made the Kabocha squash soup the other day, too. I wasn't overly impressed with it and thought it could use something. I thought since it's considered "superhero" that might be why. Where did you get your squash? I got mine at Super G and it didn't sound like it was near the size of yours!

  2. Hey!! So TKL totally blocked me out :( I get on there w/ google connect and it hasn't let me click on there to log-in for more than a week. So strange!

    I got my kabocha squash from a place called Compare in Charlotte. It was $7!!! I will be eating on that thing forever lol!

    I am pretty much addicted to the peanutbutter krispy brown rice bars. I had them 2x today... probably not the best thing haha!

  3. That's a shame about TKL, weird that you can't logon the way you normally do.

    It sounds like you will be enjoying the kabocha for some time to come! LOL! At least you froze it so you don't have to eat it all right now. I can see getting sick of it.

    I got my ingredients to make another batch of the peanut butter rice cereal treats. I can't wait, they're sooo good. I made another good bar recipe that I got off the back of my bag of carob chips. Those are yummy. I decided to start a blog, too so I'm going to post the recipe for those on there soon.
