Chocolate Oatmeal Fantasy Cookies

Gretchen is a natural mama! Her blog is sooo informative on all things natural and holistic. Gretchen is a true friend, at 39 weeks pregnant (a few weeks back), she made her infamous no-bake cookies to share with you just for this post. And... I am so honored she's sharing this WINNING story here for all of you! Thanks girl!

Back in high school I discovered the beauty of no bake cookies. I must have been quite enamored by them, because when I logged the recipe on a 3x5 card I named then Chocolate Oatmeal Fantasy Cookies. A little racy if you ask me, but in my high school mind that obviously just meant that they were to-die-for delicious.

This year the county fair hosted a cookie contest. Those who entered got into the fair for free on contest day, so, it seemed like a no brainer to whip up a batch of cookies and save myself the $7 admission. So, I did. At 39 weeks pregnant, I bustled around the kitchen measuring, mixing, and perfecting my Chocolate Oatmeal Fantasy Cookies.

After judging took place, my family and I wandered over to the building that winners were to be posted at, and to my surprise - I TOOK FIRST PLACE!

How crazy is that? I never doubted the deliciousness of my cookies, I just assumed that someone who actually baked cookies would be the winner. Oh, and no bakes look kind of like cow pies which can seem unappetizing when being featured at the fair. Know what I mean? Anyways, cow pies or not, I'm the champion of cookies in my county! Yippee!
Since I can't share the real deal with you, I'm here to pass on the ingredients and steps to make your own batch. Happy no-baking :)

CHOCOLATE OATMEAL FANTASY COOKIES

Combine and bring to a boil over low heat:
2 cups sugar
1/2 cup milk
4 tablespoons cocoa
1 stick butter

Remove from heat and stir in:
3 cups oatmeal
1/2 cup peanut butter
1 teaspoon vanilla

Allow dough to cool briefly
Drop cookie-size dollops onto parchment paper
When sturdy enough, transfer cookies to a cooling rack and allow them to completely cool

See? No science behind them at all! Super easy and obviously a real treat for judges and pregnant mamas alike! I hope you enjoy them! And, since we most likely don't live in the same county - I wholeheartedly bless you in entering these in your own fair's cookie contest :)
